A Quick Sandwich

Been a minute since I did a dinner post! Did you miss it??? Yes I know, I know...hehe
Tonight I made a quick Spicy BBQ Tofu Sandwich! It was goooooooood!!!!

What I used, and how I made it :)

.organic extra firm tofu
.organic spicy honey bbq sauce
.organic baby spinach
.red cabbage
.cucumber
.tomato
.sprouted grain bread

Cut tofu into rectangular slices, and sprinkle sea salt to taste (i used pink Himalayan sea salt)
Fry Tofu, then set on paper towel to soak up the oil
Brush Tofu with bbq sauce of your choosing
Toast bread, then add a little veganise ( vegan mayo option )

Build Sandwich

Add slices of bbq tofu on bread
Add raw spinach
Add raw red cabbage
Add slices of cucumber
Add a slice of tomato
Cover with other slice of bread


                   Served with a chilled cup of H20 :-)

YuuuuuuuuuuuuuuuuuuuuuuuMMMMMMMMMMMMMMMMM!!!!

.grated nutmeg

Dinner @ the Vibez's...Yesterday Night

Had a little snow storm hit last night which caused my internet to cease working, so I couldn't post this till now. Soooooooo here's what we had for din din yesterday nite :) ohhh Before I go on to the menu let me just say when I find a good thing I use it OFTEN! Many times when I get a good recipe I heart we would literally eat that ALLLLLLL week long! I don't mind, I actually think it's a good thing for the body. Really takes a lot for the body to break things down...even harder with all the variety that you drown it it with. So having some uniformity at times is less stress on our digestive systems that are often over worked but the way, how often and what we eat

Ok Ok, back to what I made....

* Vegan Black bean Burgery (Recipe a few posts down)


* Vegan Potato Salad ( potatoes  veganise,everything raw from this point----> onions, raw red/green peppers, scallion, thyme, sea salt)


* Raw kale and cabbage salad 


* Tall glass of H2o


Now, I am not a big potato fan I really wanted to do a fig salad, but didnt have enough fig. But this was cool, tasted great and for the most part a very healthy meal. And I would say about 65% raw (I am not good with the math...just saying)

Here's What's Popping in I Kitchen


                      

Easy Healthy Foods are always on my mind! Being a single mommy of 3..ages 6 and under along with everything else going on means time is of the essence ALWAYS. I really like black beans and I used to get a great black bean burger from the heath-food store, but once I started getting back on point with my foods I read the back of the box and realized it not only had eggs but milk as well :(. So I decided to make my own and sooooooooooooooooooooo Glad I did because these are a HIT in a meh yard ( in my best Jamaican accent..hehehe)! I got some of the recipe from a a vegan website but really free styled most of it. 
Okay here's the recipe for InI Vegan Black Bean Burgers :)

                    ********** Ingredients**********

* Oil ( I use Safflower )

* Sea Salt and Cayenne Pepper

* 1 Can of black beans ( sidebar: I don't like beans in a can, I try not to eat anything in a can but had no time to soak the black beans over night sooooooo can beans is what it was)

* 1/2 Cup of Rolled Oats

* 2 Slices of Chopped up Wheat Bread... I used All Natural (that's the name of the brand) Wheat with grains 

* Red and Green Peppers, Garlic, Tyme, and Scallions Chopped Up ( Use amount that is best for you )

                       ************ Prep************

* Drain Beans out of the can and put in large bowl. Use fork and mash beans until they are smooth with a bit of texture then add sea salt and cayenne pepper to taste

* Add oil to fry pan and saute the chopped onions, peppers, tyme, scallions, and garlic for about 5 min

* Once sauteed add to black bean mixture and mix in, then add the chopped bread and oats and mix some more

* The mixture should be semi firm and might be a bit sticky

* Shape mixture into patties and fry

       ****Mixture Makes About 10 - 12 Burgers****

I served with a Cabbage Slaw and cucumber/tomato salad and I must say the kiddies LOVEDDD IT!! Hope You all try it and love it too!!!!

Yummy Yummy for the Tummy


Hey!!!!!!!!!!!!!!!!  3 Days No Blogging :(.. been Sooo busy getting things together for an event this weekend, but i wanted to pop in and chat for a bit!

Food! As you all may know by now I am vegan ( actually trying to go Raw...HUGE process!), but I had slipped up a bit over the last few years and not been choosing the healthiest of options ( no meat but junk). For a  few months now I have been trying hard to get myself and the youths back on the right track! I will document the journey from time to time with you all. I want to talk more about healthy choices and share some info that I have been introduced to about healthy living, but that will take plenty time and don't have that today. Today I just want to show some healthy vegan options that I use daily!

Above is this Morning's Grocery haul.. lots of great stuff for the kiddies and I! Here's what I got...

. Prune Juice ( Yes the kids love it too!)
. Coconut Milk ( Trying to not do too much Soy Milk...will   
  discuss more about that next time)
. Chocolate Almond Milk ( For the Kiddies )
. Dry Black Eye Peas
. Dry Lentil Peas
. Popcorn ( to pop on the stove top )
. Smart Balance Peanut Butter
. Squash
. Red Cabbage
. Broccoli
. Cucumbers
. Pineapple
. Red Apples
. Grapes
. Papaya 

All of these things make for healthy meals and snacks! People always wonder if the girls like their food and constantly say well don't you give them a little candy or chips..they are children :(... ( Why exactly such Unhealthy options have become equated with "childhood" is beyond me...but must admit I once held the same type of sentiment!) The kids have great snacks all the time. I get them blue corn chips ( really like the option with flax seed..I get it from Target Archer Farms Brand) , they eat that with or without salsa. They like plantain chips, so i get that from time to time, Granola bars (they LOVE the Archer farms Oatmeal Raisin bar the most ), Popcorn, and of course Mother Earth's candy FRUITS! Cant list everything off the top of my head, but point is there are many things that are tasty and great for the youths!

Ok, well I need to get back to work, will leave you with today's Dinner ( I know it's Early but better to have the heavy stuff now and something lighter closer to bedtime...i don't always organize well enough to do this everyday tho ) Anyways here's the meal...

* Wheat Bulgar w/ onions and broccoli mixed in 
   . In pot add water and your desired amount of Bulgar ( I'm 
     not good with measurements, but the water 
     should cover the Bulgar by about a cup), Add sea salt
     and chopped Red onions. When Bulgar comes to 
     a boil and is near completion, add chopped broccoli. 
     Set fire to low and cover pot until Bulgar is cooked. 
     ( This grain cooks pretty fast and does not need to get 
     super soft)
    

* Sauteed Black-Eye Peas w/Red Onions and Tomatoes 
  . Boil the BEP till soft... saute onions and tomato in a  fry 
    pan for about 2min then add the black eye peas ( do not 
    strain out water)add a little water,some sea salt and 
    black pepper to your desired taste, let simmer...and 
    voila!)

 * Red Cabbage Slaw 
   . Shredded Red Cabbage with Diced Red Onions Add 
     Veganase ( vegan option to Mayo), Add a tip       
     Sea Salt stir!

* Sliced Cucumber

The Girls Loved it!!!! Cleaned their Plates!!!
